Arugula is a favorite in the Sweet Salad Company Gardens and I use it to make fresh Salad for a quick and easy lunch or side salad for dinner. When growing this beautiful plant I find that succession planting leaves me with endless amounts of this wonderful vegetable.
Adding any other delicious ripe veggies from the garden would be a great addition for this meal and Cherry Tomatoes are my favorite. Planting just a few Cherry Tomato plants and maintaining them through out the season benefits the Sweet Salad Company Gardens for months through out the year.
I really enjoy prepping the soil for any leafy vegetable in the Sweet Salad Gardens. We have almost an endless supply of plants to use in our gardens. We enjoy sharing these bounties with our family and friends. I document the types of plants that we grow in the gardens and we are trying our hand at seed saving.

Ingredients
Salad
- 4 cups fresh arugula
- 2 cups cherry tomatoes
Dressing
- 2 tbsp extra-virgin olive oil
- 1 lemon zested and squeezed
- Salt and freshly ground black pepper
Instructions
- 1. In a large bowl, combine clean and dry arugula and cherry tomatoes2. In a small bowl, Combine olive oil and lemon zest with the freshly squeezed lemon juice. Whisk in the salt and pepper.3. Lightly drizzle the dressing over the prepared salad. 4. Add your favorite ingredients if desired.
