Quick Spring Salad

Spring Salad

Celebrate Spring with this salad that bursts with flavor and design.

Ingredients

  • 2 lbs Asparagus 2 bunches (woody ends removed)
  • 2 tbsp Olive Oil
  • 1 tsp Sea Salt
  • 8 ounces Spring Salad Mix
  • 1.5 cups shredded carrot
  • 5 radish thinly sliced
  • 2 cans chick peas seasoned and roasted in the oven
  • 1 cup Feta
  • 1 Avacado Sliced

Dressing

  • 4 tbsp Lemon Juice
  • 2/3 cup Olive Oil
  • 2/3 cup Basil Leaves packed
  • 2 tbsp Honey
  • 1 clove Garlic
  • 1/8 tsp Salt
  • 1/8 tsp Pepper
  • 1/8 tsp Cayenne Pepper

Instructions

  • Preheat the oven to 375 degrees. Season and oil the asparagus and chick peas. Roast for 15 minutes.
    While the asparagus and chick peas are roasting prepare the dressing.
    In a blender combine the salt, pepper, honey, garlic, basil, olive oil and lemon juice and cayenne pepper. Blend and season to taste.
    In a large serving bowl assemble the spring salad mix, with the carrots, radish, cooled chick peas and asparagus, Sprinkle with feta cheese and sliced avocado.
