Spring Salad
Celebrate Spring with this salad that bursts with flavor and design.
Servings: 8 people
Ingredients
- 2 lbs Asparagus 2 bunches (woody ends removed)
- 2 tbsp Olive Oil
- 1 tsp Sea Salt
- 8 ounces Spring Salad Mix
- 1.5 cups shredded carrot
- 5 radish thinly sliced
- 2 cans chick peas seasoned and roasted in the oven
- 1 cup Feta
- 1 Avacado Sliced
Dressing
- 4 tbsp Lemon Juice
- 2/3 cup Olive Oil
- 2/3 cup Basil Leaves packed
- 2 tbsp Honey
- 1 clove Garlic
- 1/8 tsp Salt
- 1/8 tsp Pepper
- 1/8 tsp Cayenne Pepper
Instructions
- Preheat the oven to 375 degrees. Season and oil the asparagus and chick peas. Roast for 15 minutes. While the asparagus and chick peas are roasting prepare the dressing. In a blender combine the salt, pepper, honey, garlic, basil, olive oil and lemon juice and cayenne pepper. Blend and season to taste. In a large serving bowl assemble the spring salad mix, with the carrots, radish, cooled chick peas and asparagus, Sprinkle with feta cheese and sliced avocado.Enjoy!
